High-temperature (Hi-Temp) cheese is a specially processed cheese designed to resist melting, burning, or separating during high-heat cooking, making it ideal for sausage, burgers, and baked goods, retaining its shape as 1/4" cubes while providing creamy flavor and texture, unlike regular cheese which melts too quickly. Made with lower moisture and fat, it's tougher and stays intact up to 400°F (204°C), adding pockets of cheesy goodness to smoked sausages, bratwurst, and snack sticks.
