One HuntChef Country Style Brine Kit and One HuntChef Maple Sausage Kit!! This bundle will make up to 30lbs of Bacon!!
DIRECTIONS
For 5lbs of bacon, divide each component of the Country Style Brine Kit (sodium erythorbate, tripolyphosphate, and seasoning mixture) into 6 equal parts -- each part will make up to 5 pounds of meat, then set aside 5 parts for storage. Take 1 part of each brine component and mix together to form your dry brine. Add your dry brine to your ground meat and mix thoroughly.
Line a foil pan or loaf pan with plastic wrap, then add your brined ground meat mixture. Take one of your 5 lbs. MTN Top Maple Sausage Kit packets and sprinkle approximately 1/3 of the packet across the top of your bacon mixture. Smoke (or bake) your bacon at approximately 225°F for 2.5 hours, or until bacon reaches an internal temperature of 155°F.
INGREDIENTS
Country Style Brine Kit: Salt, brown sugar, spices, 0.75% nitrite, sodium erythorbate, and tripolyphosphate.
MTN Top Maple Sausage Mix: Sugar, salt, flavorings {including natural maple flavorings (sugar, water, propylene glycol and natural flavorings)}, MSG, spices, 0.04% each of BHA, BHT, and citric acid; < 2% propylene glycol added to prevent caking.
